I thought the IRS setup would be lighter than a live axle - I mean, look at how huge that thing is!

Not if you account for cradles, mounts and all the related stuff.

You ever held an axle? They're not that bad. CV joints are pretty hefty, as are cradles, control arms...

A lot of it depends on what kind of rear independent suspension it is too. Some designs like a double wishbone provides better movement and less unsprung weight, but are overall pretty hefty designs. Some designs, like a corvette's pseudo-independent leaf spring rear axle are very light and simple but offer limited movement and traction.

Fox rear end is identical as well. Control arms are the same.

As others have mentioned, cradles, arms, links, diff ad up over a straight axle. The axle you show is sometimes called a satchell link. Uppers and lowers control antisquat. Diagonals control side movement. All 4 can work in unison to create a proper rollsteer curve. 3links are common in roadracing. 4links with q panhard bar are common for drag. 4link with adjustable watts linkage can raise or lower rollcenter as well and are roadraced as well. Leafs can do amazing things when equipped with spherical bearings. There are a lot of good books on the matter and plusses and minuses of each design.

Yep $5k per car additional was the estimation. It was going to be only on the GT500. Due to the cost and also change in leadership within Ford SVT didn't help matters.
